Oh hey, girl! I know the scene all too well. It’s 4:45 pm. The kids have lost their minds. Your husband just got home. Everybody is asking you questions, and you just remembered you forgot to put out a meat for dinner. Now you’re trying to make up some kind of meal or order take out while checking the clock to see if it’s magically bed time yet.
I know… it’s hard. Making dinner after a long day can feel like a cruel trap you somehow have to get out of every night if you’re not prepared! I started to plan meals out intentionally again a couple months ago, and it not only has helped this 4:45 chaos, but it’s actually made me excited (most nights) to cook. There’s just something about knowing you have a recipe ready with the ingredients in your pantry that will taste delish.
Breakfasts: Mango Smoothies with OJ blended base, homemade blueberry muffins, hard boiled eggs (make in bulk for the week)
Lunches: Sandwich or meat and cheese roll up, piece of fruit, yogurt or apple sauce pouch, and a crunchy (chips/annie’s cheese puffs/nuts)

Pizza Night (x2 – every Saturday night!)
Orange Shrimp or Chicken on Rice
Pasta Night (Get your favorite noodles, sauces and cheeses, and let everybody build their own bowl!)

Baked Chicken with Sweet Potato Hash and Cucumber Salad
