Finding meals my entire family wants to eat for dinner that isn’t just frozen chicken nuggets is a daily challenge. I am committed to getting good food into my children, and so I try out new ideas or recipes often. While some are a hit others are not. But last week, I was 3 for 3! We did left overs or ate out the other couple of nights because of our week’s schedule + soups last a long time! Here are the recipes I tested last week and LOVED.
Spicy Bean Soup (served with grilled cheese): I made this one up as I went, but stuck to a typical broth based soup idea.
6 cups of chicken broth, 4 cans of beans (I used 3 white kidney & 1 red kidney), chili powder, salt, pepper, 1 cup of green salsa, shredded chicken
Baked Potato Soup by Half Baked Harvest: Knox didn’t even want to try this because he doesn’t like mashed potatoes (his words), but I made him try it and he went back for seconds! I made a double batch for a friend who just had a baby down the street, and it was perfect to deliver with muffins. Such a tasty soup!
Rosemary Apricot Chicken on Rice with Brussel Sprouts: I made this one up but got the idea from a Half Baked Harvest recipe I saw in my cookbook. I baked my chicken thighs at 400 with Apricot jam spooned across the top with\ salt & pepper, olive oil, and fresh rosemary. I served over rice (always cooked in chicken broth, not water!), and with baked brussel sprouts I bought pre-cut from Trader Joes! I drank the juice out of the pan from this one because it was SO GOOD.
BONUS MEAL: For our date night on Thursday, I made baked feta and butternut squash served on pasta with steak. It was BEYOND GOOD.
Preheat the oven to 400, place a block of feta in the middle of your pan and surround the butternut squash. I bought both from Trader Joe’s. They have bags of cubed butternut squash. I drizzled olive oil generously on top with salt, pepper, and fresh rosemary. I eye balled it, but about 20 minutes is how long I baked it all together. Paul seared our steaks to a medium and I sliced to top my bowl. 10/10 the best dish I made all week!
