Happy Saturday! We were traveling this week and spent a few days in Alabama for a training with our church planting network. First of all, Alabama is so pretty! I love seeing new places and had such an incredible time. We were in Birmingham and just really enjoyed ourselves. If you’re local and in need of a church, my husband and I would LOVE to meet you and talk about Cadence with you. We have an event in two weeks at a fun spot in Plano where you can meet other people and learn the vision we have for our city.
Here’s my week of meals line-up for those cozy fall nights in! We are officially CHILLY here in Texas, like 40’s *gasp!* and I am whipping out the fire wood, the flannel, and all my go-t0 cold weather meals for the family. This weekend, my greatest worries in life are how judged I will be for starting to switch out my pumpkins for nutcrackers… But it’s 2020 y’all and I say… Do it. 😉 We actually have no idea when our home will be closing for sure, but it’s likely we will be in boxes on Christmas. So… I am getting in all the Christmas I can now!

Week of Cozy Meals
My Chili: DUH. We have strict rules in my home that you can only eat chili when it’s cold outside or it ruins the magic of chili… lol. Like I am stickler for it.
Apple Cider Pork Loin (In the Ninja Foodi!): This is so yummy and so easy, y’all. It’s great to add apple slices on top, too! Throw your pork loin in and then add carrots and brussel sprouts for an EASY cold night in dinner. *Costco has some great ones!*
Sweet Potato Shepherd’s Pie: EASY, HEALTHY, ONE POT. Alleluia!
Rotisserie Chicken Soup: Even easier when you buy one of Costco’s chickens that are ALREADY pulled and shredded for you. I just saw this yesterday and shed a tear for every tired mom across America.
Sweet Potato Casserole + Salmon: I put the salmon in our Ninja Foodi *THE BEST THING EVER- Read my review here* and just put salt, pepper, and seasoned salt. I put it in the air fryer add-on, but use the baking method (400 for about 12 minutes, depending on your preference) Then, you can top it off with the air fryer setting for 1-2 minutes to crisp it up perfectly!
Baked French Toast: Sometimes, you just gotta do something sweet for dinner and break all the rules. I love when we tell Knox we are having breakfast for dinner! We rarely do it, but that’s what makes it so fun. A movie night in Knox’s tent + baked french toast is the PERFECT weekend fun at home.
