I have been trying really hard to limit my sweets the last few weeks, and focusing on healthy proteins and fats. (Ignore my Braums run last night.) In the process, accompanied with also being so tired of eating the same things every single day, I have created a few meals in my kitchen recently that I am excited to share with y’all. I am the type of person who finds recipe inspiration but rarely follows a recipe line by line. I like to play and toss stuff in that I think might work, and it usually works out well. Usually… haha.
A few weeks ago I made a Balsamic Quinoa Salad that is great hot or cold. I always make stuff in bulk for lunches, and this one was perfect to have on hand for quick lunches with crockpot chicken. (We always have a tupperware container of chicken that we made for that week’s lunches.) I had seen something along these lines on Convey the Moment‘s blog, and thought I would take my own stab at it.
Balsamic Quinoa Salad
1 cup quinoa (we buy Bob’s Red Mill GF)
1 peeled and cubed cucumber
1 cup of cherry tomato halves
balsamic vinagrette (TBH- I just pour it to taste… I don’t measure…)
hand full of red onion chopped and diced
Salt and pepper
***You can also add in sautéed kale and coconut oil for more greens!
This is great fresh off the stove or cold from the fridge with tuna or chicken. I have added just about every veggie into the mix with this meal, too. But, my favorites are what I put above.
Remember, eating healthy doesn’t have to be boring nor does it have to be hard! I am cheering you on. 😉 Just think grain (or healthy starch) + protein + veggie.
A few other recent finds and faves include Lara brand’s Cashew and Almond Butter Chocolate Coconut Spread- OMG. Put that stuff on an apple or banana with a little honey. YES LORD. I am loving all the new flavors of Halo Top “nice cream”, too. My favorite still is Birthday Cake. I have also found myself at I Love Juice Bar Allen multiple times a week for their sweet greens juice or the green smoothie. Both are AMAZING and I highly suggest.
