I think the hardest part about living a healthy lifestyle is not only cooking your own food and meal prepping, but knowing what to cook. No matter how good you are at meal prepping…. if you’re prepping the same things every week… you’re going to get sick of it. Unless your name is Paul Morrison, because then you can live off of the same 5 foods for the rest of your life and not even give a care in the world about it.
But for the rest of us, I think we could all agree that a piece of chicken from the skillet and broccoli for every meal gets really old really fast. (But even still…. #guilty.)
Let’s vow to eat More exciting meals, ladies! Who is with me?!
I went to Amanda and Molly of Pure Barre for their favorite meals and snacks- items they actually eat on the reg- to get them through long days of teaching, mommying, and owning/running a business. I can ALWAYS use some new recipes for Paul and me, so you better believe I took notes from their faves.
These ladies get up at the crack of dawn on the daily- Pure Barre classes start at 5:30 AM every day, and Amanda and Molly bounce between two locations (McKinney + Allen). As you can imagine, properly eating at each meal time is necessary as well as snacking.
Owner and PB instructor, Amanda, said her favorite thing she makes for snacking throughout the day is this really easy No-Bake Protein Bar recipe! Don’t let this recipe scare you (it is made with black beans), because this one does the whole healthy chocolate treat thing WELL. Amanda said she will snack on these in between classes to carry her through the day.
Molly said she always starts her day off with a smoothie and a hardboiled egg. It’s the perfect protein boost to get her going. (Mommies- she said she shares them with her daughter because of the good fruits and veggies!) She loves following Simple Green Smoothies on Instagram, because they are constantly posting new tasty recipes for her to try out.
Her favorite go-to smoothie is The Lemon Cleanser (2 Servings):
2 cups of fresh kale
2 cups of water
2 cups of mango
As for a healthy dinner or lunch option? Try one of Molly’s favorites: The loaded sweet potato! (This is basically what the Morrison household eats a few times a week). Paul and I pretty much live off of sweet potato hash consisting of kale, collard greens, and spinach with a dash of honey and some sort of meat every other night. (Simply sautee all of your ingredients together with coconut oil- I find the coconut oil brings out a sweetness + balances the bitterness of collard green!) I put an egg on top most nights, and if you make a large batch of this, it works for any meal of the day! I also prep a crockpot of chicken to last Paul and I for lunches throughout the week since we are always on the go!

If you haven’t come to Pure Barre yet… what is keeping you from trying it out?! I am officially a Platform ADDICT y’all. I have been to a few classes now, and try to rearrange my schedule to get a Platform class in (they only offer one a day, so you have to be on top of things and reserve a spot before it is sold out!) I feel like I am dancing the whole time. We actually legitimately do extensions and tilt kicks without them actually being called that. My favorite part is the cardio in the seat section. You jump kick and if you push off correctly, you can get some killer hang time. I feel like I am flying… haha. But, seriously. It’s the best! I sweat so much in Platform (keep that in mind if you usually go places after your Pure Barre class).
