If you don’t know, Paul and I both have food allergies. It was a pretty life altering deal when I found out gluten was the answer to a lot of issues in my life at age 21. Then, a year into marriage, we found out Paul was allergic to a dairy protein called casein. This is a whole level above the inconveniences of lactose, because casein is in things you wouldn’t even think- like ham. In case you were wondering, yes. We are absolutely the most annoying couple to go out to eat with. BUT, it can be done. All this to say, learning to cook dairy and gluten free in the comfort of our own home was vital for us.
Desserts have been the toughest thing to conquer. A depressing truth considering I clearly have a sweet tooth.
UNTIL THIS RECIPE. Chewy, soft, thick and sweet, this vegan cookie is nothing like any other gluten free recipe I have ever made. I adapted it from this recipe, but added in and took out a couple of things.
Vegan Chocolate Chip Cookie
1 c. Gluten Free All Purpose Flour (I use Bob’s Red Mill)
1/2 tsp. Baking Powder (GF)
Two Pinches of Salt
1 tsp. Vanilla Extract
1/4 c. Organic Honey
4 tbsp. Organic Peanut Butter
1/2 c. Apple Sauce
1/2 A Bag (or to taste) of Enjoy Life Dark Chocolate Chips
1/4 c. Brown Sugar
Preheat oven to 350 degrees
Mix in the dry ingredients, then add in peanut butter, vanilla, honey, and apple sauce.
Fold in the chocolate chips last. (Batter will be fairly sticky, but manageable)
Place in balls on cookie stone, bake for 13-15 minutes (I take mine out early for a doughy center!)
Just saying, I will gladly toot my own horn, my husband doesn’t usually like chocolate and he ate four of these last night. My brother-in-law is pretty anti-vegan, he likes his butter, and he ate more than I even know. These cookies. are. bomb.
